Mogul products, such as wine gum, pastilles, or aerated confectionery, are produced using the so-called mogul process. In this process, a mass made of gelatin, starch, or gum Arabic is poured into the desired shape.

Important factors are the respective hardening time and ambient temperature. Depending on its consistency and ingredients, the mass may take one to seventy-two hours to harden.
Once this period is over, the candies are removed from the starch trays by simply turning them over. In the next step, the candies are cleaned and their surface is treated with wax or moistened with steam and glazed with a sugar coating.
